Tomatoes (Roma)

Tomato Relish Recipe


500 grams round tomatoes, diced

4 or 5 medium sized onions, diced

1 1/2 cups sugar

1 - 2 red capsciums

1 cup white vinegar

1 dessertspoon salt

1 tablespoon curry powder

2 tablespoons cornflour

1/2 tablespoon mustard


Cut up tomatoes, onions and capscium. Boil with salt, curry, mustard, sugar and nearly all the vinegar. Boil for 5 minutes. Stand for 10 minutes. Thicken with the cornflour blended with the rest of the vinegar. Boil until thick for approximately 10 minutes. Place in bottles.
