Carrot Cake Recipe

Ingredients:

1/2 cup melted butter

1 cup sugar

1/2 teaspoon cinnamon

2 eggs

1 teaspoon baking powder

1 cup plain flour

vanilla essence

1 1/2 cups grated carrot

1/2 cup walnuts chopped

Method:

Mix sugar and butter and eggs well in a mix master on medium speed, Sift the flour and add to the bowl with the dry ingredients, add carrot and nuts and mix with a wooden spoon. Mix well.

Bake at 1600 for fan forced oven or 180 0 for normal oven for approximately 30 minutes.

Carrot Cake Frosting

Ingredients:

90 grams cream cheese

1/2 teaspoon vanilla

1 cup icing sugar

milk to mix

Lemon essence

Method:

Beat in a mix master on medium speed until smooth. Spread evenly over the cake when it is cool.
